Jhinge Posto(Ridge Gourd with Poppy Seeds)

Ingredients:

1kg jhinge(Ring Gourd)

1 onion(chopped)

3 tbsp poppy seeds(pasted)

3 tbsp oil

¼ tsp mustard seeds

½ tsp turmeric paste

Salt to taste

1 whole red chilli

Procedure:

Peel jhinge and then cut lengthwise in half. Cut again into small circles of quarter inch. Add little salt to it and leave it aside for sometime to remove out excess water from it. Squeez out the water from it.

Heat oil in a pan and then add mustard seeds and whole red chilli to it. Add onions to it and sauté well. Add jhinge(ridge gourd) and sauté well. Add salt and turmeric paste and mix well. Add poppy seeds paste to it and cook well till the vegetables becomes dry. Check the seasoning and adjust accordingly. Serve hot.
