Niramish Kochur Loti(Veg)
Ingredients:
200 gm Kochur Loti
4 tbsp shredded coconut
1 small onion, chopped finely(optional)
¼ tsp kala jeera
3- 4 green chillies
¼ tsp turmeric powder
1 small tomato(diced)
¼ tsp red chilli powder
¼ tsp coriander powder
Salt to taste
2 tbsp mustard oil
Procedure:
Boil water in a wok. Add kochur loti, salt and a pinch of turmeric. Cover and boil for 10-12 minutes.Drain water thoroughly.
Heat oil in a pan, add kala jeera and green chillies. Add chopped onions. Saute till golden brown. Add kochur loti and fry for 8-10 minutes on medium heat. Add diced tomato, shredded coconut, turmeric, coriander powder, red chilli poweder and salt. Saute for 5-7 minutes or until kochur loti is completely covered with all spices and coconut. Cover to cook on medium low heat for 5-7 minutes. Stir occasionally to ensure that vegetables does not stick to the bottom of the pan. Serve hot with steamed rice.
